Apple Radish Fall Slaw

Ingredients for 4 servings

1 tart red apple

1 bulb fennel

1 watermelon radish

1 baby leek

4 cups mixed greens

1/2 cup candied black walnuts

1/2 cup crumbled white cheddar

1/2 cup rendered bacon lardons

1 tbs whole grain mustard

1 tbs apple cider vinegar

1 tbs maple syrup

1 tbs soy sauce

salt and pepper to taste

Preparation

1. In a large bowl, place freshly washed mixed greens. Thinly slice apple, fennel, radish and leek and add to bowl.
2. In a small bowl whisk together mustard, vinegar, syrup and soy to form vinaigrette.
3. Season greens/veggies with salt and pepper. Drizzle with vinaigrette and toss to coat.
4. Plate greens/veggies and top with walnuts, cheddar and lardons. Enjoy!
